Custard Tart Bilbao-Style
By Julia Marcos de Llano
INGREDIENTS:

This is a very special recipe from Bilbao (a city in the Basque country, Spain). In Spanish this dessert is called "pastel de arroz," although the name is misleading since the tart doesn't contain rice (arroz). Back in the day it used to be made with rice flour. It's one of the easiest and most delicious recipes I've ever tried. Everybody likes it because it's smooth and not rich at all. I hope you all enjoy it!

1 cup sugar
1 cup flour
2 tablespoons butter
2 cups milk
3 eggs

PREPARATION:

Preheat the oven to 350 degrees. Lightly butter a 9-inch pie plate or pan. Mix all the ingredients in a blender or in a food processor fitted with a metal blade. Put in the plate or pan, then in the oven for 50 minutes. Done!

Serves 6 to 8.
